We as a family moved to La Unión from Santiago in 2001, at a time when our children were little; Florence (3 years) and Nicolas (6 months). First we started breeding emus, then selling Emu oil, for which we set up a factory to extract, refine and deodorize the oil. At the same time we developed "cured emu meat" like the Serrano ham. In 2008 we decided to venture into the world of "high-end charcuterie", as known in Europe for more than 200 years, but from species other than pork.
WHY LA UNIÓN?

Because we wanted a place of "human scale" for our children - maybe, like Santiago de Chile used to be 40 years ago? Because we also wanted clean air, the nature of the Chilean Patagonia and of course the proximity to the grandparents of our children.
